Pink Bunny Cupcakes

This cutie could be Bugs Bunny's girlfriend Lola Bunny! Pair it with strawberry cake and pink baking cups for a very berry pink party.


What you need:

Reynolds® Baking Cups (Party Pink Cupcakes)
1 package (18.25 ounces) strawberry cake mix
1 container (12 oz.) ready-to-spread white frosting
Pink food coloring
2 cups shredded coconut
24 large marshmallows
Pink sugar crystals
48 mini blue candies
24 red jelly beans
24 mini marshmallows
1 tube black decorating frosting
Black licorice
Recommended:  1 plain decorating tip, #3

Instructions:

PREHEAT oven to 350°F. 

PLACE Reynolds Baking Cups in muffin pans; set aside. 

PREPARE cake mix following package directions for 24 cupcakes.  Spoon batter into baking cups. 

BAKE following package directions (18 to 22 minutes).  Cool.

TINT frosting pink. Spread the top of each cupcake with tinted frosting. 

TINT coconut pink; chop coconut until fine.

ROLL top of frosted cupcakes in chopped coconut.

MAKE bunny:

  1. Cut 2 thin slices from a marshmallow for each set of ears. 
  2. Press the cut edges of the marshmallows into pink sugar.
  3. Spoon pink frosting into a pastry bag fitted with a #3 plain tip.
  4. Pipe an outline of frosting around each of the marshmallow ears. Sprinkle with pink coconut.
  5. Pipe a dot of frosting on top of the bunny head and 
    add the ears. Adding more frosting if necessary.
  6. Pipe dots of white frosting and add 2 small 
    blue candies for the eyes on each cupcake.
  7. Add a red jellybean for each nose.
  8. Cut mini marshmallows in half.  Place the cut sides onto cupcakes for teeth.
  9. Pipe a line of black frosting to make 2 front teeth.
  10. Cut black licorice into 1 to 1 1/2-inch pieces.  Insert 2 pieces on each side of marshmallow teeth as whiskers.
